My contribution to the Great YouTube Poutine Challenge of 2018!
I went with pork belly burnt ends poutine because I’ve never had that before, and I thought it would be perfect!
I used Loot N Booty BBQ’s Everything Rub (http://lootnbootybbq.com/product/loot-n-booty-everything-rub-14-oz/) which was perfect. Then I smoked the belly cubes at 250 for about 3 hours with cherry wood.
Next I pulled the cubes and put them in a foil pan with brown sugar, butter and honey. I covered the pan and put them back on for another 1.5 hours.
For the fries, we cubed up some russet potatoes and tossed them in the Actifry with some bacon fat and french fry seasoning. Cooked them in there for about 40 minutes.
We made a simple gravy with the drippings in the foil pan and some water and corn starch to thicken it up.
Then we tossed on some shredded sharp cheddar cheese and green onion for the finishing touches!
